A mild growing season associated with moderate crop led to slow and even ripening during harvest 2021, preserving good acidity and balance in the whites while intensifying the varietal characters.
Riesling is a rare find in Margaret River and this wine is sourced from a single vineyard located in the Wallcliffe area. The vines are over 30 years old and are managed with minimal intervention to keep the fruit shaded from excessive sunlight or temperature in summer. The harvest took place early in the season, in the first days of February 2021.
The grapes are harvested in the coolest hours of the night and hurried to the winery to preserve all the freshness of the fruit. The juice is pressed into stainless steel tanks where the temperature of the ferment can be controlled to remain very low, preserving the varietal aromas and enhancing the textural secondary characters of the variety.
Lime leaf, lemon verbena with the slightest hint of characteristic Riesling petrol notes in its youth, which will develop into patina over aging time.
The crisp acidity lends an austere focus to the attack. While the linear character carries the palate to long length, fresh fruit, honeyed notes and lees texture add a morish complexity.
